- 4 boneless, skinless chicken breasts
- 1 cup salsa verde
- 1 cup shredded pepper jack cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together the olive oil, garlic powder, cumin, salt, and black pepper.
- Brush the chicken breasts with the oil mixture.
- Grill the chicken for 6-7 minutes on each side or until cooked through.
- During the last few minutes of grilling, top each chicken breast with salsa verde and shredded pepper jack cheese.
- Close the grill lid and cook until the cheese is melted.
- Remove from the grill, sprinkle with chopped cilantro, and serve.
Notes
- For an extra kick, add jalapeños to the salsa verde.
- Serve with rice or tortillas for a complete meal.
