- 2 medium zucchinis
- 1 can (15 oz) chickpeas, drained and rinsed
- 8 oz burrata cheese
- 2 tablespoons chili oil
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh basil, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the grill to medium-high heat.
- Slice the zucchinis lengthwise and brush with olive oil.
- Grill the zucchinis for about 4-5 minutes on each side until tender.
- In a bowl, combine the grilled zucchini, chickpeas, salt, pepper, basil, and lemon juice.
- Toss gently to combine.
- Serve the salad topped with burrata cheese and drizzled with chili oil.
