A delicious and refreshing wrap filled with grilled zucchini, feta cheese, chickpeas, and a herbed yogurt sauce.

Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup feta cheese, crumbled
  • 1 can chickpeas, drained and rinsed
  • 1 cup plain yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 2 whole wheat wraps
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Slice the zucchinis lengthwise and brush with olive oil. Season with salt and pepper.
  3. Grill the zucchinis for about 5-7 minutes on each side until tender and charred.
  4. In a bowl, mix the yogurt with dill and parsley. Season with salt and pepper.
  5. Lay the grilled zucchini on the wraps, add chickpeas and crumbled feta on top.
  6. Drizzle with the herbed yogurt sauce and wrap tightly.
  7. Slice in half and serve fresh.

Notes

  • Feel free to add other vegetables or protein sources to customize your wrap.
