- 2 cups grated carrots
- 1 cup crushed pineapple, drained

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine grated carrots and crushed pineapple.
- In another bowl, mix sugar, flour, baking soda, salt, and cinnamon.
- Whisk together the eggs, oil, and vanilla extract in a separate bowl.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the carrot and pineapple mixture.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- For added flavor, you can sprinkle chopped nuts or raisins into the batter.
- Frosting can be added after cooling completely for a sweeter touch.
