Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, beat together granulated sugar, brown sugar, and eggs until smooth.
- Add the oil and mix until combined. Gradually stir in the dry ingredients.
- Fold in the grated carrots, crushed pineapple, and nuts if using.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, consider adding coconut to the batter.
- Top the cake with cream cheese frosting for a delicious finish.
