- 4 boneless, skinless chicken thighs
- 1 cup pineapple chunks
- 2 bell peppers, sliced
- 1 red onion, sliced
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon olive oil

- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together the soy sauce, brown sugar, olive oil, garlic, ginger, and black pepper.
- Add the chicken thighs to the bowl and coat them in the marinade.
- On a sheet pan, arrange the marinated chicken, pineapple, bell peppers, and red onion.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Serve warm and enjoy!
