- 4 pounds chicken (leg quarters or drumsticks)
- 1 cup soy sauce
- 3/4 cup brown sugar
- 1/4 cup ketchup
- 1/2 cup pineapple juice
- 2 cloves garlic (minced)
- 1 inch ginger (grated)
- 1/4 cup green onions (chopped)
Instructions
- In a large bowl, mix together soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, and green onions.
- Add chicken to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium heat.
- Remove chicken from the marinade and place on the grill. Cook for about 25-30 minutes, turning occasionally until the internal temperature reaches 165°F.
- Brush with remaining marinade during the last 10 minutes of cooking for extra flavor.
- Remove from grill and let rest for a few minutes before serving.
Notes
- For best results, use fresh pineapple juice.
- Pair with rice and a green salad for a complete meal.
