- 2 pounds chicken thighs
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 2 tablespoons ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 ripe pineapple, cut into rings
Instructions
- In a bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, ginger, garlic, and sesame oil.
- Marinate chicken thighs in the mixture for at least 1 hour.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked.
- Grill the pineapple rings for 2-3 minutes until caramelized.
- Serve the chicken topped with grilled pineapple.
Notes
- For extra flavor, marinate the chicken overnight.
- Serve with rice or a fresh salad for a complete meal.
