Ingredients

  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour

  • 1 teaspoon cinnamon

  • 1/4 cup milk
  • 1/2 cup brown sugar
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the Greek yogurt, honey, egg, and vanilla extract until smooth.
  3. In another bowl, combine the whole wheat flour, baking powder, cinnamon, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. In a small bowl, combine brown sugar and melted butter to create the swirl mixture.
  6. Fill each muffin cup halfway with batter, add a spoonful of the swirl mixture, and top with remaining batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
