- 1 cup Greek yogurt
- 1/4 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup milk
- 1/2 cup brown sugar
- 1 tablespoon melted butter
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together the Greek yogurt, honey, egg, and vanilla extract until smooth.
- In another bowl, combine the whole wheat flour, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- In a small bowl, combine brown sugar and melted butter to create the swirl mixture.
- Fill each muffin cup halfway with batter, add a spoonful of the swirl mixture, and top with remaining batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For a sweeter muffin, increase the honey or add more brown sugar.
- You can also add nuts or chocolate chips for extra flavor.
