- 2 ripe bananas
- 1 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1.5 cups whole wheat flour
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the bananas and then mix in Greek yogurt, honey, eggs, and vanilla until smooth.
- In another bowl, mix the dry ingredients: baking soda, baking powder, salt, cinnamon, and whole wheat flour.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the chopped pecans.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
- For added sweetness, feel free to add chocolate chips or dried fruit.
