Ingredients

- 1 pound turkey bacon
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cans white beans, rinsed and drained
- 1 cup diced chicken ham
- 2 cups kale, chopped
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
- Add onion and garlic to the pot and sauté until translucent.
- Pour in chicken broth and bring to a simmer.
- Add white beans, chopped chicken ham, kale, thyme, and rosemary.
- Simmer for 20 minutes. Season with salt and pepper.
- Stir in the chopped turkey bacon before serving.
Notes
- This soup can be made ahead and tastes even better the next day.
- Feel free to add other vegetables like carrots or celery.
