Ingredients

  • 1 pound beef stew meat
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup green beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef and brown on all sides.
  3. Stir in the onions and garlic, cooking until the onions are translucent.
  4. Add the beef broth, potatoes, carrots, celery, green beans, and diced tomatoes.
  5. Season with thyme, salt, and pepper.
  6. Bring to a boil, then lower the heat and let simmer for about 1.5 hours.
  7. Serve hot.

Notes

  • For a thicker soup, mash some of the potatoes in the pot.
  • Can be made in a slow cooker for an even richer flavor.
