- 1 pound beef stew meat
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup green beans
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the beef and brown on all sides.
- Stir in the onions and garlic, cooking until the onions are translucent.
- Add the beef broth, potatoes, carrots, celery, green beans, and diced tomatoes.
- Season with thyme, salt, and pepper.
- Bring to a boil, then lower the heat and let simmer for about 1.5 hours.
- Serve hot.
Notes
- For a thicker soup, mash some of the potatoes in the pot.
- Can be made in a slow cooker for an even richer flavor.
