- 8 rice paper wrappers
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup bell pepper, sliced
- 1 cup avocado, sliced
- 1/2 cup fresh cilantro
- 1/2 cup vermicelli noodles, cooked
Instructions
- Soak the rice paper wrappers in warm water for about 30 seconds until pliable.
- Place a small amount of each filling ingredient on the lower third of the wrapper.
- Roll the wrapper tightly around the filling, folding the sides in as you go.
- Repeat with remaining wrappers and ingredients.
- Serve with peanut sauce for dipping.
