- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1 cup mixed berries
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour and sugar.
- Add softened butter and mix until combined.
- In a separate bowl, whisk the eggs and vanilla extract.
- Pour the egg mixture into the flour mixture and mix until smooth.
- Pour the batter into a greased cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- Meanwhile, whip the heavy cream until stiff peaks form.
- Once the cake is cool, spread whipped cream on top and decorate with mixed berries.
- Slice and serve chilled.
