Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • 1/4 cup cocoa powder
  • 1/2 cup dark chocolate shavings

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar, and mix well.
  4. Add vanilla and eggs, one at a time, mixing on low until just combined.
  5. Fold in sour cream, cherry pie filling, and cocoa powder until well incorporated.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the edges are set. Chill in the refrigerator for at least 4 hours before serving.
  8. Before serving, top with dark chocolate shavings.
