- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar, divided
- 3 packages (8 ounces each) cream cheese, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup cherry pie filling
- 1/4 cup cocoa powder
- 1/2 cup dark chocolate shavings
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- In a large bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar, and mix well.
- Add vanilla and eggs, one at a time, mixing on low until just combined.
- Fold in sour cream, cherry pie filling, and cocoa powder until well incorporated.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the edges are set. Chill in the refrigerator for at least 4 hours before serving.
- Before serving, top with dark chocolate shavings.

- Let the cheesecake sit at room temperature for 30 minutes before serving for the best texture.
