Instructions
- Preheat your smoker to 225°F.
- In a bowl, mix the softened butter with rosemary, thyme, garlic, salt, pepper, and Dijon mustard until well combined.
- Rub the herb butter mixture all over the beef rib roast, covering it evenly.
- Place the roast in the smoker and cook until the internal temperature reaches your desired doneness, about 4-5 hours for medium rare.
- Remove the roast from the smoker and let it rest for at least 15 minutes before slicing.
