Ingredients

  • 4 pieces chicken breasts
  • 1 cup breadcrumbs
  • 2 tablespoons herbs (thyme, rosemary)
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 4 medium potatoes
  • 1 pound carrots
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, herbs, and Parmesan.
  3. Coat chicken breasts in the breadcrumb mixture.
  4. Place chicken on a baking sheet and bake for 25-30 minutes.
  5. While chicken is baking, peel and boil potatoes until tender.
  6. Prepare glazed carrots by sautéing in butter until tender.
  7. In a saucepan, heat heavy cream and season with salt and pepper for gravy.
  8. Serve chicken with gravy, mashed potatoes, and glazed carrots.

Notes

  • For extra flavor, marinate chicken in garlic and lemon juice before coating.
  • Leftover chicken can be used in salads or sandwiches.
