- 4 pieces chicken breasts
- 1 cup breadcrumbs
- 2 tablespoons herbs (thyme, rosemary)
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 4 medium potatoes
- 1 pound carrots
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix breadcrumbs, herbs, and Parmesan.
- Coat chicken breasts in the breadcrumb mixture.
- Place chicken on a baking sheet and bake for 25-30 minutes.
- While chicken is baking, peel and boil potatoes until tender.
- Prepare glazed carrots by sautéing in butter until tender.
- In a saucepan, heat heavy cream and season with salt and pepper for gravy.
- Serve chicken with gravy, mashed potatoes, and glazed carrots.
Notes
- For extra flavor, marinate chicken in garlic and lemon juice before coating.
- Leftover chicken can be used in salads or sandwiches.
