- 1 cup broad beans, shelled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt

- 1 egg
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
Instructions
- In a large bowl, combine ground meat, parsley, basil, garlic, salt, pepper, egg, and breadcrumbs. Mix well.
- Form the mixture into small meatballs.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides.
- Add broad beans and lemon juice to the skillet. Cover and simmer for 10 minutes.
- Serve meatballs drizzled with lemon zest.
