Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 2 cups chicken broth
  • 1 cup milk or unsweetened almond milk
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch (optional for thickening)

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic; sauté until the onion is translucent.
  3. Add the broccoli and chicken broth; bring to a boil. Reduce heat and simmer until broccoli is tender.
  4. Blend the soup until smooth, returning to the pot.
  5. Stir in the milk and cheese until melted and combined.
  6. Crumble the turkey bacon and mix back in or serve on top.
  7. Season with salt and pepper to taste, adding cornstarch if desired for thickness.

Notes

  • For a thicker soup, blend longer or add more cornstarch.
  • Adjust cheese according to preference for richness.
