- 1 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour

- 1/2 teaspoon salt
- 2 cups powdered sugar
- 1/2 cup additional creamy peanut butter for filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until fluffy.
- Add the eggs and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the peanut butter mixture, stirring until combined.
- Drop tablespoon-sized amounts of dough onto lined baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
- Once cooled, spread creamy peanut butter on the flat side of one cookie and sandwich it with another cookie.
- Dust with powdered sugar if desired.

- For a chocolate twist, try adding cocoa powder to the dough.
