- 1 cup rice
- 4 cups milk

Instructions
- In a large pot, combine rice, milk, sugar, and salt over medium heat.
- Bring to a boil, then reduce heat and simmer for about 20 minutes, stirring frequently.
- In a bowl, whisk together eggs and vanilla extract.
- Slowly stir in a cup of the hot rice mixture into the egg mixture to temper the eggs.
- Pour the egg mixture back into the pot and cook for an additional 5-10 minutes until thickened.
- Remove from heat and stir in cinnamon.
- Let cool before serving.
Notes
- For a creamier texture, use half-and-half instead of milk.
- Add raisins or nuts for extra flavor.
