- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup cream cheese, softened
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
Instructions
- Preheat your oven to 325°F (163°C). Grease and flour a 9x5 inch loaf pan.
- Cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Beat in the cream cheese until well combined.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the vanilla extract and chopped strawberries.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, until a toothpick inserted into the center comes out clean.
- Allow cooling in the pan for 10 minutes before transferring to a wire rack to cool completely.
