  • 2 cups fresh strawberries, sliced
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 cups cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan to form the crust.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Pour the cream cheese mixture over the crust and bake for 50-60 minutes.
  5. Allow the cheesecake to cool, then chill in the refrigerator for at least 4 hours.
  6. Before serving, whip the heavy cream until soft peaks form and fold in sliced strawberries.
  7. Top the cheesecake with the whipped cream and strawberries before serving.
