- 2 cups fresh strawberries, sliced
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 4 large eggs
- 2 cups cream cheese, softened
- 1 teaspoon vanilla extract
- 1 cup heavy cream
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan to form the crust.
- In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Pour the cream cheese mixture over the crust and bake for 50-60 minutes.
- Allow the cheesecake to cool, then chill in the refrigerator for at least 4 hours.
- Before serving, whip the heavy cream until soft peaks form and fold in sliced strawberries.
- Top the cheesecake with the whipped cream and strawberries before serving.
Notes
- For best results, use room temperature cream cheese.
- Feel free to use frozen strawberries if fresh ones are not available.
