Ingredients

- 1 teaspoon dried Italian seasoning (optional)
- Salt and pepper, to taste

Instructions

1. Warm olive oil in a large pot over medium heat.
2. Sauté onion, carrots, and celery for about 5 minutes, until onions are translucent.
3. Stir in garlic; cook for 1 minute more.
4. Add vegetable broth, diced tomatoes, and Italian seasoning (if using).
5. Bring soup to a simmer, then reduce heat and cook for 15–20 minutes, or until vegetables are tender.
6. Season with salt and pepper to taste.
