- 4 chicken thighs
- 1 cup ricotta cheese
- 1/2 cup honey
- 1 cup fresh cranberries
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, place the chicken thighs and drizzle with olive oil.
- In a bowl, mix together ricotta cheese, honey, salt, pepper, and thyme.
- Spread the ricotta mixture over the chicken thighs.
- Add cranberries on top of the chicken.
- Bake in the oven for 45-50 minutes, or until the chicken is fully cooked.
- Let it rest for a few minutes before serving.
