- 4 ounces turkey bacon, chopped
- 1 cup chopped onion
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 4 cups vegetable broth

- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped turkey bacon and cook until crispy.
- Stir in the chopped onion and cook until translucent.
- Add the sliced mushrooms and garlic; sauté until mushrooms are tender.
- Pour in the vegetable broth, thyme, and soy sauce; bring to a simmer.
- Stir in the heavy cream and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot with fresh bread.
Notes
- This soup can be made vegetarian by omitting the turkey bacon.
- Top with fresh herbs for added flavor.
