- 1 cup diced turkey bacon
- 1 medium onion, chopped
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 1 tablespoon flour
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the chopped onion and sauté until translucent.
- Add the sliced mushrooms and garlic, cooking until the mushrooms are tender.
- Sprinkle flour over the mixture and stir to combine.
- Gradually add the vegetable broth, stirring continuously to avoid lumps.
- Bring to a simmer and let it cook for 10 minutes.
- Stir in the milk and cooked turkey bacon, then mix in the dill.
- Season with salt and pepper to taste, and serve hot.
Notes
- For a creamier soup, you can use half-and-half instead of milk.
- Feel free to add other vegetables like carrots or celery for extra flavor.
