  • 1 large egg
  • 1 tsp vanilla extract

  • 1/2 cup whipped cream
  • 1/4 cup brewed coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 1 tbsp cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Press the dough into the muffin cups, creating a cup shape. Bake for 12-15 minutes or until firm.
  6. Let the cups cool completely.
  7. In a bowl, combine mascarpone cheese, whipped cream, coffee, and coffee liqueur (if using).
  8. Spoon the mascarpone mixture into the cooled cookie cups.
  9. Dust with cocoa powder before serving. Enjoy!
