- 1 cup ricotta cheese
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sliced almonds, for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the ricotta, butter, and sugar until smooth.
- Add the eggs and almond extract, mixing well.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop tablespoons of dough onto a baking sheet lined with parchment paper.
- Press a few sliced almonds onto the top of each cookie.
- Bake for 15-20 minutes until lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For added flavor, consider adding a pinch of lemon zest to the dough.
- These cookies can be enjoyed warm or at room temperature.
