Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add turkey bacon, cooking until crispy.
- Add potatoes and onions to the skillet. Cook until potatoes are tender.
- In a bowl, whisk together eggs, salt, and pepper. Pour over the potato mixture.
- Sprinkle with Parmesan cheese.
- Bake in the oven for 20-25 minutes, or until the frittata is set.
- Let cool slightly before slicing and serving.
