- 2 medium zucchinis
- 4 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup cooked turkey bacon, chopped
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchinis and squeeze out excess moisture.
- In a bowl, whisk together the eggs, Italian seasoning, garlic powder, salt, and pepper.
- Stir in the zucchini, turkey bacon, mozzarella, and Parmesan.
- Grease a pie dish with olive oil and pour the mixture into it.
- Bake for 30-35 minutes, or until set and golden brown on top.
- Let it cool slightly before slicing and serving.
Notes
- For a vegetarian version, omit the turkey bacon.
- Can be stored in the refrigerator for up to 3 days.
