Ingredients

  • 2 medium zucchinis
  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked turkey bacon, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchinis and squeeze out excess moisture.
  3. In a bowl, whisk together the eggs, Italian seasoning, garlic powder, salt, and pepper.
  4. Stir in the zucchini, turkey bacon, mozzarella, and Parmesan.
  5. Grease a pie dish with olive oil and pour the mixture into it.
  6. Bake for 30-35 minutes, or until set and golden brown on top.
  7. Let it cool slightly before slicing and serving.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Can be stored in the refrigerator for up to 3 days.
