- 12 large eggs
- 4 slices turkey bacon
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 teaspoon garlic powder
- 1 cup finely chopped pickled jalapeños
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced chicken ham
- 1/4 cup chopped fresh cilantro
- 1/4 cup shredded cheese (optional)
Instructions
- Hard boil the eggs, then let them cool and peel them.
- Slice the eggs in half, and carefully remove the yolks.
- In a bowl, mash the yolks and mix in mayonnaise, Dijon mustard, garlic powder, jalapeños, salt, and pepper until smooth.
- Fold in the diced chicken ham and chopped cilantro.
- Pipe or spoon the yolk mixture back into the egg whites.
- Crumble the cooked turkey bacon on top and garnish with shredded cheese if desired.
- Chill before serving.
Notes
- For a spicier kick, add more jalapeños to the mixture.
- These can be made a day in advance for easy entertaining.
