- 1 crown roast of beef leg
- 2 cups mushrooms, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
Instructions
- Preheat the oven to 350°F (175°C).
- In a pan, heat olive oil over medium heat and sauté garlic and mushrooms until soft.
- Mix in thyme, rosemary, salt, and pepper.
- Rub the beef roast with the mushroom mixture.
- Place the roast in a roasting pan and pour beef broth around it.
- Roast in the oven for about 2 hours or until internal temperature reaches 145°F (63°C).
- Let the roast rest for 15 minutes before slicing and serving.
Notes
- For added flavor, marinate the roast overnight with the seasoning.
- Serve with a side of roasted vegetables.
