- 4 large eggs
- 1 ripe avocado
- 2 slices turkey bacon
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 green onion, chopped
- 1 tablespoon lemon juice
- salt to taste
- pepper to taste
Instructions
- Hard boil the eggs by placing them in a pot of water, bringing it to a boil, and then cooking for 10-12 minutes.
- While the eggs are boiling, cook the turkey bacon in a skillet until crispy. Chop into small pieces.
- Once the eggs are done, peel and chop them into a bowl.
- Add the avocado, mayonnaise, Dijon mustard, lemon juice, green onion, chopped turkey bacon, salt, and pepper to the bowl.
- Mix everything gently until well combined.
- Serve on a bed of greens or in lettuce wraps.
