Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, melted butter, erythritol, and salt to form a crust. Press the mixture into a pie pan.
- Bake the crust for 10-12 minutes until golden brown. Remove from oven and let cool.
- In another bowl, whisk together eggs, sour cream, lemon juice, lemon zest, vanilla extract, and baking powder until smooth.
- Pour the filling into the cooled crust.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow pie to cool, then refrigerate for at least 2 hours before serving.
Notes
- For extra lemon flavor, add more lemon zest.
- Serve with whipped cream for a delightful topping.
