Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 pound mixed vegetables (bell peppers, carrots, broccoli)
  • 1/4 cup Korean BBQ sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, soy sauce, sesame oil, garlic, and ginger. Mix until combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet and bake for 20 minutes, or until cooked through.
  5. Meanwhile, sauté mixed vegetables in a large skillet over medium heat until tender.
  6. Add Korean BBQ sauce to the skillet and toss with the vegetables.
  7. Once meatballs are done, add them to the skillet and mix well.
  8. Serve hot with rice or noodles.

Notes

  • For extra flavor, marinate the meatballs in the BBQ sauce for 30 minutes before baking.
  • Feel free to substitute ground turkey or chicken for the beef.
