- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 pound mixed vegetables (bell peppers, carrots, broccoli)
- 1/4 cup Korean BBQ sauce
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, egg, soy sauce, sesame oil, garlic, and ginger. Mix until combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place meatballs on a baking sheet and bake for 20 minutes, or until cooked through.
- Meanwhile, sauté mixed vegetables in a large skillet over medium heat until tender.
- Add Korean BBQ sauce to the skillet and toss with the vegetables.
- Once meatballs are done, add them to the skillet and mix well.
- Serve hot with rice or noodles.
Notes
- For extra flavor, marinate the meatballs in the BBQ sauce for 30 minutes before baking.
- Feel free to substitute ground turkey or chicken for the beef.
