  • 4 large baking potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 500 grams ground beef or turkey
  • 400 grams canned diced tomatoes
  • 200 grams ricotta cheese
  • 200 grams shredded mozzarella cheese
  • 100 grams grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes, poke holes in them with a fork, and microwave on high for 10-12 minutes until tender.
  3. In a pan, heat the olive oil over medium heat, then sauté the onion and garlic until soft.
  4. Add the ground meat and cook until browned, then stir in the diced tomatoes and seasonings. Simmer for 10 minutes.
  5. Slice the potatoes in half and scoop out some flesh; mix the flesh with ricotta cheese.
  6. Layer the meat sauce, potato mixture, and mozzarella in a baking dish. Top with Parmesan cheese.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
