- 4 large baking potatoes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 500 grams ground beef or turkey
- 400 grams canned diced tomatoes
- 200 grams ricotta cheese
- 200 grams shredded mozzarella cheese
- 100 grams grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 200°C (400°F).
- Wash the potatoes, poke holes in them with a fork, and microwave on high for 10-12 minutes until tender.
- In a pan, heat the olive oil over medium heat, then sauté the onion and garlic until soft.
- Add the ground meat and cook until browned, then stir in the diced tomatoes and seasonings. Simmer for 10 minutes.
- Slice the potatoes in half and scoop out some flesh; mix the flesh with ricotta cheese.
- Layer the meat sauce, potato mixture, and mozzarella in a baking dish. Top with Parmesan cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
Notes
- For extra flavor, add some fresh herbs like basil or parsley.
- Feel free to substitute the meat with vegetables for a vegetarian option.
