- 1/2 cup heavy cream
- 1 large egg
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the blueberries and lemon zest.
- In another bowl, whisk together the heavy cream and egg.
- Pour the liquid ingredients into the dry ingredients, mixing until just combined.
- Turn the dough onto a floured surface and pat into a circle about 1 inch thick.
- Cut into triangles and place on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until golden brown.
- Let cool before serving.

- Use fresh blueberries for the best flavor.
