- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 2 cups fresh spinach
- 4 slices turkey bacon, cooked and chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until soft.
- Add chicken broth and bring to a boil. Stir in the orzo pasta and cook until al dente.
- Add the cooked chicken, spinach, turkey bacon, and thyme to the pot. Simmer for about 3-5 minutes.
- Season with salt and pepper, then serve warm.

- This soup can be customized with your favorite vegetables.
- Feel free to substitute regular bacon if desired.
