- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar (for frosting)
- 1 tablespoon additional lemon juice (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
- In a mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in lemon juice and zest.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before icing.
- For the frosting, mix powdered sugar and lemon juice until smooth and spreadable. Pour over cooled bars.
- Cut into squares and serve.
Notes
- For a more intense lemon flavor, add more lemon zest.
- These bars are best served chilled.
