- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 16 ounces cream cheese, softened
- 1 cup sour cream
- 3 large eggs
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon zest
- ½ cup fresh lemon juice
- 3 large egg whites
- ¼ teaspoon cream of tartar
- ½ cup granulated sugar (for meringue)
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, flour, lemon zest, and lemon juice; mix until combined.
- Pour the cheesecake mixture into the crust and bake for about 50 minutes.
- For the meringue, beat egg whites and cream of tartar until soft peaks form, then gradually add sugar and beat until stiff peaks form.
- Spread the meringue over the hot cheesecake and bake for an additional 10-15 minutes until golden.
- Let cool and refrigerate for at least 4 hours before serving.
