  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon zest
  • ½ cup fresh lemon juice
  • 3 large egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar (for meringue)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, flour, lemon zest, and lemon juice; mix until combined.
  4. Pour the cheesecake mixture into the crust and bake for about 50 minutes.
  5. For the meringue, beat egg whites and cream of tartar until soft peaks form, then gradually add sugar and beat until stiff peaks form.
  6. Spread the meringue over the hot cheesecake and bake for an additional 10-15 minutes until golden.
  7. Let cool and refrigerate for at least 4 hours before serving.
