- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups lemon filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, oats, brown sugar, salt, and baking soda.
- Add melted butter to the dry mixture and stir until crumbly.
- Press half of the mixture into the bottom of a greased baking dish.
- Spread the lemon filling over the crust.
- Top with remaining crumb mixture.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- For a richer flavor, use lemon zest in the filling.
- These bars can be served warm or chilled.
