Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Mix in the vanilla extract and lemon zest.
- Gradually add the flour and salt, mixing until combined.
- Shape the dough into balls and place them on a baking sheet.
- Use your thumb to create an indent in the center of each cookie.
- Fill each indent with lemon curd.
- Bake for 12-15 minutes or until lightly golden.
