- 1 cup crushed graham crackers
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup white chocolate chips, melted
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 2 teaspoons lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the crushed graham crackers and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the melted white chocolate, eggs, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
- Pour the filling over the crust in the springform pan.
- Bake for 50-60 minutes until the center is set but slightly wobbly.
- Turn off the oven and leave the cheesecake inside for an hour, then remove it and cool at room temperature.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a more intense lemon flavor, you can increase the lemon juice and zest.
- Make sure the cream cheese is at room temperature for a smoother filling.
