Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup white chocolate chips, melted
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the crushed graham crackers and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the melted white chocolate, eggs, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
  6. Pour the filling over the crust in the springform pan.
  7. Bake for 50-60 minutes until the center is set but slightly wobbly.
  8. Turn off the oven and leave the cheesecake inside for an hour, then remove it and cool at room temperature.
  9. Refrigerate for at least 4 hours or overnight before serving.
