  • 1 pound ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces orzo pasta
  • 4 cups fresh spinach
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together ground chicken, ricotta, Parmesan, egg, parsley, garlic, lemon zest, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 25-30 minutes or until cooked through.
  5. While the meatballs cook, bring a pot of salted water to a boil and add orzo cooking according to the package instructions.
  6. In a large pan, heat olive oil over medium heat, add spinach and sauté until wilted.
  7. Drain the orzo and toss it with the spinach.
  8. Serve meatballs over the garlic spinach orzo.
