Ingredients

  • 2 fillets salmon
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 2 cups broccoli florets
  • 4 medium potatoes
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the potatoes into wedges and place on a baking sheet. Drizzle with olive oil, garlic powder, salt, and pepper. Bake for 30 minutes.
  3. Meanwhile, season the salmon with lemon juice, salt, and pepper.
  4. In a pan over medium heat, melt the butter and add the salmon, cooking for about 4-5 minutes per side.
  5. In the last 10 minutes of potato cooking, add broccoli to the baking sheet and return to the oven.
  6. Serve the salmon with crispy potatoes and broccoli on the side.
