  • 1 cup almond flour

  • 1/2 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Mix in the vanilla extract, then combine the flours and salt, mixing until just combined.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Roll out the dough on a floured surface and cut out cookies, using a smaller cutter to create a window for some of them.
  6. Bake for 10-12 minutes or until lightly golden.
  7. Once cooled, spread raspberry jam on the whole cookies, then top with the cut-out cookies.
