- 1 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine cocoa powder, granulated sugar, and vegetable oil.
- Add vanilla extract and eggs, mixing well.
- Stir in flour and salt until just combined.
- Spoon brownie batter into cupcake liners.
- In another bowl, beat together cream cheese and powdered sugar until smooth.
- Drop a spoonful of the cream cheese mixture on top of each brownie cup.
- Add chocolate chips on top of the cheesecake mixture.
- Bake for 20-25 minutes or until set.
- Let cool before serving.
Notes
- Feel free to add nuts or other toppings as desired.
- These can be made a day in advance for convenience.
