- 2 medium sweet potatoes
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat the oven to 400°F (200°C).
- Prick sweet potatoes with a fork and bake for 45-60 minutes until tender.
- In a skillet, cook ground beef or turkey over medium heat until browned; drain excess fat.
- Add taco seasoning and follow package instructions.
- Once sweet potatoes are done, let them cool slightly, then slice them in half lengthwise.
- Fluff the insides with a fork and fill with the meat mixture, black beans, corn, and diced tomatoes.
- Top with shredded lettuce, cheese, sour cream, and cilantro.
- Serve warm and enjoy!
Notes
- For a vegetarian option, use lentils or mushrooms instead of meat.
- Feel free to add additional toppings such as jalapeños or avocado.
