  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prick sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a skillet, cook ground beef or turkey over medium heat until browned; drain excess fat.
  4. Add taco seasoning and follow package instructions.
  5. Once sweet potatoes are done, let them cool slightly, then slice them in half lengthwise.
  6. Fluff the insides with a fork and fill with the meat mixture, black beans, corn, and diced tomatoes.
  7. Top with shredded lettuce, cheese, sour cream, and cilantro.
