- 4 large zucchinis
- 1 cup turkey bacon, chopped
- 1 cup chicken ham, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Wash the zucchinis and cut them in half lengthwise.
- Using a spoon, scoop out the centers to create boats.
- In a skillet, cook the turkey bacon until crispy. Add the chicken ham to the skillet and cook for an additional 2 minutes.
- In a mixing bowl, combine the cooked turkey bacon, chicken ham, shredded cheese, breadcrumbs, eggs, garlic powder, onion powder, black pepper, and salt.
- Stuff each zucchini boat with the mixture.
- Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes or until the zucchinis are tender.
- Remove from the oven and let sit for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables to the stuffing.
- For a vegetarian option, omit the bacon and ham and add more cheese and vegetables instead.
